Thiaminase

Thiaminase called enzymes that occur in several bacterial species, in some fish and plants such as bracken ( Pteridium aquilinum ). The enzymes when permanently included along with the food can destroy the vitamin B1 (thiamin ) in the diet and nutritional deficiency ( hypovitaminosis ) and thus lead to diseases such as beri- beri. Cooking destroys thiaminase.
