Frédy Girardet

Frédy Girardet ( born November 17, 1936 in Lausanne ) is a Swiss chef.

His restaurant Frédy Girardet in Crissier near Lausanne was awarded three Michelin stars and was until his retirement in 1996 as one of the best in the world.

Career

His father Benjamin Girardet cooked for many years at the Hôtel Bellevue Central in Lausanne and then opened a bistro in Crissier. Frédy Girardet was trained in the restaurant Le Grand Chêne, but initially sought a career athletes. Then he had to become a key event in the Burgundy Restaurant of Pierre Troisgros, which convinced him to cook. When his father died unexpectedly at age 56, he took over the Bistro. In 1971 he opened his restaurant named after him. He began with classical French cuisine, which he innovatively and Light towards refined and thus developed the style of nouvelle cuisine along with other contemporaries. Girardet 1996 sold the restaurant to Philippe Rochat.

Others

1984 came his book The Cuisine of Fredy Girardet. Girardet has been awarded by Gault Millau the title Chef of the Century, the only wear three other chefs worldwide (Paul Bocuse, Joël Robuchon and Eckart Witzigmann ). At Girardet students belongs to Léa Linster other.
