Orujo

Pomace is a grape marc, with 37 to 50 percent alcohol by volume content, which is mainly produced in the northern Spanish region of Galicia.

For the short term Pomace the actual name aguardientes de orujo is reduced colloquially to the starting material. The word in Spanish Pomace referred generally to the pressing residue, residue, regardless of the fruit (grapes, olives, etc.). In the case shown here, it is produced during the wine-presses residues as well as for the lees, resulting in wine making ( cf. racking ).

The grape marc is first fermented and baked later. The simple, traditional stills hot pota or Alquitara. Alquitara refers to Arabic: al- Gattara (the one that distilled). Pota refers to the lower part of the combustion system - a large vessel of clay or copper, in which the combustible material is heated. The burners are derived therefrom referred to as Poteiros.

In Galicia Pomace is produced at least since the 17th century. Initially, only the monasteries possessed the necessary skills for alcohol distillation and used it for the production of medicines. Later, the knowledge spread out so that each winery further processed his wine residues themselves. 1989 Control ( Concello regulador ) was founded, which today includes more than 20 manufacturers. Among other things, in Porto Marin there is a Pomace hard or "Fiesta de aguardiente " / " Festa da Augardente " (Spanish / Galician: hard liquor ).
