Tartrazine is a synthetic chemical compound from the group of azo dyes, which is used under the name of E 102 food dye. The lemon-yellow to orange-colored solid is colorfast in acidic foods and during exposure to light and high temperatures. The Colour Index lists the dye under the numbers 640 and 19140 and a description of Acid Yellow 23

Production

It is prepared by diazotizing sulfanilic acid and coupling with a Pyrazolonabkömmling. The latter is produced by condensing phenylhydrazine -4 -sulfonic acid with Oxalessigsäureester. Subsequently, the ester is saponified with sodium hydroxide solution. An alternative synthesis utilizes the condensation of two molecules of phenylhydrazine -4 -sulfonic acid with one molecule Tetrahydroxysuccinic (CAS Number: 76-30-2 ).

Use

Tartrazine is for fruit and herb liqueurs, spirits, fruit and fruit wines, but also for non-alcoholic flavored drinks, showers and shower powder, bubble teas, pastry, confectionery, snacks, pudding powder, desserts, for mustard, flavored processed cheese, fish and cancer pastes used in wasabi as a color coat for coated tablets, for coloring cheese rinds and plastic casings and also for medicinal products.

Health

The fabric has an allergenic effect, making for allergy sufferers, especially for people with allergic reactions to acetylsalicylic acid and asthmatic problems. It can lead to difficulty breathing, rashes, hay fever, blurred vision and skin spots. Since allergies to tartrazine no antibodies can be detected, it is called a pseudo-allergy. Consumer centers do not recommend the consumption and the Children's Cancer Hospital, University of Dusseldorf holds the fabric dangerous.

A cross sensitivity to benzoic acid or acetylsalicylic acid ( aspirin) is known.

Tartrazine is - as well as some other dyes - discussed as a cause of hyperactivity. This suspicion has been confirmed by recent studies.

Legal situation

In Norway, tartrazine is prohibited. In Germany and Austria, a prohibition was repealed as part of the EU legal adjustments. The prohibition in Austria was true even for utilitarian objects. Since July 21, 2010 Food that contain the azo dye tartrazine must, in the European Union with the warning " Can activity and attention in children affect " are marked. In the U.S., the substance known as FD & C Yellow No.. 5 approved both for certain foods, for drugs and cosmetics. In Spain, tartrazine can be found as Nahrungsfärbemittel " Colorante " in any supermarket as a seasoning agent.

Tartrazine may be a mixture of quinoline yellow ( E104 ) and sunset yellow FCF ( E 110 ) replaced.
