Safranal is the main flavoring of saffron. Is a monocyclic monoterpene aldehyde resulting from the Safranglucosid picrocrocin. Saffron also contains the isomers 2,6,6- trimethyl-1 ,4- cyclohexadiene- 1 -carbaldehyde.
