Lower Saxon cuisine

The Lower Saxon cuisine actually consists of a variety of regional, north German kitchens, but are very similar in many areas, such as the Oldenburg, Brunswick, or the East Friesian. It is usually down to earth and very hearty in part, but also very tasty.

Vegetables and Side Dishes

The most common are potatoes, which are eaten in various forms (especially as boiled potatoes ), before the side.

Popular and typical local vegetables in winter is the kale, regionally. va designated as Bremen and Braunschweig country also known as " brown coal "; see also kale food.

Around Burgdorf, Nienburg, Brunswick and in Oldenburger Munsterland as well as in the southern part of the Lüneburg Heath and on the Stade Geest asparagus is grown and eaten like.

Fish

Typical fish dishes are on the one near the coast and in the area of the Elbe, Weser, Jade and Ems estuary plaice, flounder, herring and mackerel, inland as well as trout or eel is eaten frequently (eg on Steinhude ).

Meat dishes

In the Lüneburg Heath and the Bremen area, as well as in the Schaumburg district you eat like a cooked sausage ( spicy sausages, cabbage sausage, Pinkel sausage), Knipp, game or game birds. Two specialties of the region Hannover are the Schlachteplatte with meat specialties and the Calenberger Pfannenschlag (also known as mad cow sausage). An internationally known sausage specialty is the " Brunswick ". In addition, we love to eat in Gifhorner and Wolfsburg room in autumn pot sausage with sauerkraut.

Soups and Stews

Before eating a soup is often served. Popular here is the wedding soup - a meat broth. On the North Sea coast, a plant called beach trident ( Triglochin maritimum ) under the name " Röhrkohl " is known. This grows in the salt marshes near the shore and directly as kale prepared as a hearty stew. Other hearty dishes from the coastal region are Swede stew and pears, beans and bacon, a stew.

Desserts and cakes

For coffee we often eat butter cakes, pies or other desserts such as the Welfenspeise.

Drinks

Lower Saxony is home to many breweries, such as in Jever, Einbeck, but also in Celle, Lüneburg, Brunswick, Allersheim ( district of Minden wood ), Hannover, Witt rings, Peine, Hagen and Göttingen. Three of the oldest, brewed since the Middle Ages beers, the Braunschweiger Mumme, the Goslar Gose and the Duck Steiner.

A German center of manufacture of spirits is the Emsland Haselünne where since the 18th century grain is burned.

In general, coffee is preferred over tea in Lower Saxony, only in the regions of East Frisia and Friesland especially strong tea ( Assam ) with " Kluntjes " ( candy ) and cream is drunk.
